Christmas is on a Sunday this year and so is New Year’s Day. Since we will spend the morning at church, I want a meal that can be cooking while I am away. This recipe for the main course is my favorite! I’ve used it for a long time and when I follow it exactly, the prime rib turns out perfectly. Over the years I’ve experimented with different seasonings, but my gang likes the McCormick Montreal Steak Seasoning the most. The best thing about this recipe is that you start it before you go to church. Turn off the oven when you leave for services and finish it up when you get home for your holiday celebration! Perfect every time!
Elegant & Easy Prime Rib Roast
Ingredients:
– 1 (5-6 lb.) standing rib roast
– 1 tbs. olive oil
– McCormick Montreal Steak Seasoning or your favorite seasoning blend for beef.
Directions:
Allow roast to stand at room temperature for at least 1 hour before putting in oven.
Preheat the oven to 375° F. Rub roast with olive oil and cover liberally with Montreal Steak seasoning; place roast on a rack in the pan with the rib side down and the fatty side up. Roast for 1 hour. Turn off oven. Leave roast in oven but do not open the oven door for the next 3 hours. About 30 minutes before serving time, turn oven to 375° F and reheat the roast.
PLEASE NOTE: Do not check or remove roast during cooking. Do not re-open the oven door from time roast is put in until ready to serve. Keeping the door shut is the secret to this cooking method! If you follow this recipe your roast will turn out perfect every time!
