Honey Glazed Chicken & Ribs
Ingredients:
- 5 pounds pork loin back ribs, spareribs or chicken
- 1 cup honey
- 1 cup packed brown sugar
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground ginger
- 1 teaspoon ground mustard
- 1 teaspoon cayenne pepper (optional)
Preparation:
- Cut chicken or ribs into serving-size pieces or leave slab intact, if preferred.
- Place meat in a large sealable plastic bag or bowl.
- Combine remaining ingredients for the marinade; pour half of the marinade over meat pieces.
- Seal bag and turn to coat; refrigerate for several hours or overnight, turning occasionally.
- Separately, cover and refrigerate remaining half of marinade mix for basting.
Cooking:
Drain and discard marinade from meat. Place ribs or chicken on a rack in a greased shallow baking pan. Cover with foil and bake at 350° for 1 hour. Drain.
Pour reserved marinade over meat (reserved marinade should be at room temperature) and bake, uncovered, for 30-45 minutes or until meat is tender, brushing occasionally with pan juices.
Makes 4-6 servings.
*If preferred, meats may be grilled on medium heat until cooked thoroughly.
