Easter is a time for faith, family, food and fun! This morning, as I started the meal preparations for Sunday, I began thinking of Easter Sundays of the past spent with my husband’s folks. We have terrific memories of gift baskets, egg hunts and great feasts! Dad & Mom Gibbs always make family holidays special and memorable. Bapa & Meme, as the grandchildren call them, are wonderful people who truly love the Lord and their family and have made special memories for each one of us.
Every holiday, from the youngest grandchild on up, we ask Meme to make her special mashed potatoes. Made with just a few simple ingredients, the tangy goodness in these potatoes pairs wonderfully with any main entrée. While finishing touches are put on the meal, these potatoes will be bubbling away and ready to go at serving time. Using the steam in the bag potatoes saves so much work and time and are still fresh and light. This Easter I’ll be serving Meme’s Mashed Potatoes with my prime rib and I guarantee you there won’t be a spoonful left!
Meme’s Mashed Potatoes
1 – 24 oz. Bag Oreida Steam n’ Mash® Cut Frozen Potatoes
1 – 16 oz. container Dean’s French Onion Chip Dip
1 – 8 oz. package of Philadelphia Cream Cheese
Mix ingredients in a glass, microwave proof bowl. Cover with lid or plastic wrap, venting slightly. Microwave on 50% power for approximately 20 minutes, stopping to stir occasionally. When potatoes are hot, top with butter and chives and serve.

I have a blessed memory of spending one special Easter in Florida with your in-laws as our host/hostess. It was shortly after my husband died and my boys were just 3 and 6 (they are now 23 and 26) and they flew us down to Florida to, as they put it, put some sand between our toes. It was the first time I saw my older son laugh since his father died. It was such a special week. I believe it was the first time I met you, as well. One of the highlights of the week was a special Easter Egg hunt after church. I am so grateful for these two generous and loving people and the special memories they gave to us.
